New Piero’s Chef Embracing Tradition of Historic, Authentic Italian Cuisine

It’s no secret that the Las Vegas Golf Insider is a longtime big fan of Piero’s Las Vegas, one of the most iconic restaurants in Las Vegas. Since 1982, Piero’s Italian Cuisine has been on of THE dining spots in Las Vegas and there is no sign of anything slowing down. In fact, Piero’s owners, Fred and Evan Glusman, are embracing the future and have added a new, dynamic chef to keep the tradition alive and do a little modernizing along the way. –By Brian Hurlburt

Chef Chris Conlon was selected by the Glusmans to replace the retiring Chef, Gilbert Fetaz, who returned to his native France for some well-earned time off. Conlon has a long history of experience including working directly with the legendary Charlie Palmer–he opened Aureole at Mandalay Bay for Palmer in 1999–and an impressive resume of other culinary and hospitality experience, including a successful run with the renowned Hakkasan Group.

“Chef Gilbert was the guy for 39 years and he played a huge part on building Piero’s into what is today,” Evan Glusman says. “He will always be loved and appreciated. Chris brings a new attitude to the kitchen, has an amazing personality, and understands and loves what Piero’s has done for 39 years. He didn’t want to re-create the wheel, but simply improve on a few things. He is unbelievably talented and what he is doing has brought new life and a younger demographic in to experience Piero’s authentic Italian cuisine. We love Piero’s and plan to be here forever.”

Conlon is honored with the opportunity and ready for the challenge.

And each guest became a part of the extended Piero’s family. I know the challenge to live up to the expectations, but that is exciting for me and our team to continue and enhance Piero’s.”
